SPECIAL COTTAGE PIE

Ingredients

1 lb. Minced Beef

1 Onion (chopped)

1 Carrot (diced)

Stick Celery (diced)

6 Mushrooms (sliced)

1 lb. Potatoes

3 Rashers smoked bacon (chopped)

2 Leek (shredded)

2 Courgette (shredded)

1 tbs. Tomato puree’

1 tbs. Flour

10 fl. oz hot Beef stock

Bay leaf

1 tsp. Dried mixed herbs

Worcester Sauce

Salt / Pepper

Butter

Milk

Grated Cheese

Method

  1. Dry fry the mince, seasoned with salt and pepper until no longer pink, remove from pan leaving fat in the pan. Add the mushrooms and fry in the remaining fat for a few minutes, remove and reserve with the mince
  2. Add the onion, celery & carrot to the pan and fry for a few minutes adding a little oil if necessary. Return the mince and mushrooms mix and cook for 5 minutes.
  3. Add the herbs, bay leaf, flour, stock, tomato puree’ and Worcester sauce to the pan, season with salt and pepper mix in well bring to the boil, reduce to a simmer and cook for 5- 10 minutes. Remove from the heat.
  4. Make mashed potatoes with the potatoes, milk and butter. While the potatoes are cooking dry fry the bacon until crispy add the courgettes and leek then fold this mixture into the mashed potato.
  5. Butter a baking dish and the mince mixture and top with the potato mixture, sprinkle with grated cheese and bake in a preheated oven 200 c for 20 –25 minutes. Serve.
